Fluffy

One of my dearests told a story about looking for Japanese pancakes without luck one night.  Seems that not many culinary establishments bother with the eggy treat. You know how when someone has surgery, then you start meeting people who have had or are about to have surgery? Well, NY Times Cooking presented a recipe for Japanese Soufflé pancakes. When time came to visit this wonderful person (ask anyone) I thought to bring the ability to make the pancakes at home and knew enough to try the recipe first. Never having made a soufflé, I underbeat the egg whites a little and the pancakes didn't hold their shape well as they fried in the pretty low heat.


Angel cake light and slightly sweet, like eating a cloud maybe, the predominant taste is egg.
