Consensus

I traveled to the excellent kitchen of dear friends and assisted with the experiment to determine what cookie dominates, chocolate chip or chocolate chunk shortbread. For proper tasting conditions, we mixed chocolate chunks into the cookie recipe. I purchased dark chocolate, 72%, something that caters to my taste.

We cannot deny the superior nature of tollhouse recipe chocolate chip cookies warm out of the oven. The chocolate dispersed more evenly and created a more gooey cookie, however, even non dark-chocolate loving testers admitted that the cookie dough cannot be beat fresh out of the oven. The chocolate chunk shortbread cookies had a lovely, crispy demerara sugar edge because we rolled it before baking. The shortbread recipe calls for flaked salt sprinkled on top, creating a complex flavor. However, the shortbread recipe has less sugar and the dark chocolate didn't come up with enough sweetness for two of our testers.

Evening One - Chocolate Chip Cookies prevail over shortbread.
Evening Two - Holy Moly!!! The chocolate chunk shortbread holds its consistency,  flavor and crispiness while the cookies suffer from aging. Chocolate Chunk Shortbread prevails over cookies.

I would make either recipe again.
