CCC IV

No, not 304, but chocolate chip cookie number four, New York Times Cooking Thin-and-Crisp Chocolate-Chip Cookies. Three of the best recipes credit Amanda Hesser and the titles describe something I fail to achieve. Yes, these cookies were thinner than the flat and gooey CCC III batch, however, the bake remained cakey.



I added Tcho 99% chunks instead of bittersweet and reduced the tablespoon of kosher salt to 3/4 tablespoon. These tasted best warm out of the oven when the melted chocolate pieces smear your fingers and mouth. Tasters enjoyed the saltiness and patiently worked their way around the intense chocolate pieces. Maybe I should bend toward the idea that sweetness defines cookies.
