Lighter Bake

Baking with chocolate sometimes involves disappointment when heaping the tricky ingredient into a recipe. The taste is always there, however, the texture and consistency isn't and that's why I had to bake the Guinness Chocolate cake again; it was a bit dry due to over baking, not because of the extra Valrhona Guanaja 70%. Did I mention that I added two ounces of it to the recipe? No extra beer though, and tasters did not discern the Guinness, which was more forward in the batter.


The cream cheese frosting compliments the intense flavor.  I missed the middle icing but appreciate the cake designed to look like a glass of Guinness before settling.
