I baked brownies during this cold, wet day; most gratifying. Again, from the excellent blog, http://www.wayofthedodo.com comes a recipe, Brownies Cockaigne, adapted from Joy Of Cooking. This brownie has plenty of chocolate and nuts. As a matter of course, I added dark chocolate chips. Preparing the pan involved only grease and I missed tasting the intense, slightly bitter chocolate powder on the bake that comes from greasing and flouring with cocoa.
The tasters all approved, enjoying the rich chocolate and the crunchy edges. This brownie recipe called for more egg and had a denser consistency that the first brownie, Milk Chocolate Brownies That Use Dark Chocolate. Making dark chocolate a more important ingredient in the kitchen suits me fine.
